Southwest Chorizo Wunderoots™ Carrot Dog

Wunderoots™ Chorizo Style Carrot Dogs topped with roasted corn and green chile salsa, pickled jalapenos and a drizzle of sour cream

Preparation

  1. Pan-fry or grill Wunderoots™ Chorizo Style Carrot Dogs according to package instructions.
  2. Heat oil in a pan and sauté corn on high heat until blistered for 5 minutes, stirring often. Take off stove and add red onion, green chiles, red bell pepper, lime juice, cumin, salt and black pepper.
  3. Assemble by topping with roasted corn and green chile salsa, pickled jalapenos and a drizzle of sour cream.

Garnish (optional):
Sprigs of cilantro leaves

  • 1 package Wunderoots™ Chorizo Style Carrot Dogs
  • 1 tablespoon oil
  • 1 1/2 cups fresh corn off the cob
  • ¼ cup red onion, diced
  • 3 tablespoons green chiles, mild, diced from can
  • ¼ cup red bell pepper, diced
  • 1 tablespoon lime juice
  • ½ teaspoon cumin
  • ⅛ teaspoon salt
  • pinch black pepper
  • pickled jalapenos, sliced
  • sour cream
  • 1 package hot dog buns
