ROSS’ CHICKEN SALAD

Ross’s Chicken Salad Rossipe is more delish than any other chicken salad you’ve ever had, PLUS it’s better for you! How is that possible? Follow these simple directions!

Preparation

 

  1. Sprinkle chicken breasts with salt and pepper and roast on a cookie sheet at 400 degrees for roughly 25 minutes (until cooked through). Set them aside to let them cool.

 

  1. Dice celery and red onion into small pieces. Dice the chives as well. Once chicken has cooled, dice into small cubes. Mix the chicken with the celery, onion and chives and squeeze in the juice of one lemon, as well as a dollop of Dijon mustard (a little goes a long way!).

 

  1. Finally, mix in the secret ingredient – 4-5 tablespoons of Bolthouse Farms Ranch! The creaminess, as well as the herbs in the dressing create a flavor explosion! Plus, you get “better for you” ingredients in your body, like yogurt! Add salt and pepper to taste, and serve a scoop atop a bed of lettuce and with some cherry tomatoes. Enjoy!
