Chilled Thai Basil Noodled Salad

Chilled Wunderoots™ Thai Basil Takeout Noodled Carrots tossed with shredded red cabbage, edamame, mango, red onion, mint, roasted cashews.

Preparation

  1. Cook Wunderoots™ Thai Basil Takeout Noodled Carrots according to the microwave package directions.
  2. Soak cooked carrot noodles in ice water to quickly chill, drain, and pat dry.
  3. In a mixing bowl, add chilled carrot noodles, cabbage, mango, red onion, mint, cashews, sesame seeds, and sauce packet. Mix to combine.
  4. Divide the carrot noodle mixture among 2 plates. Garnish with cilantro and chopped cashews, if desired.

CHEF NOTES:

Additional proteins (such as grilled chicken, shrimp, or fish fillet) can be added on top of salad.

  • 1 cup sugar snap peas, sliced thinly
  • 1 each mango, peeled, seed removed, diced
  • ¼ cup red onion, diced
  • 1 tablespoon fresh mint leaves, chopped
  • ¼ cup roasted unsalted cashews, chopped
  • 2 tablespoons sesame seeds
