Southwest Chicken Quinoa Power Bowl

Bolthouse Farms® Organic Avocado Ranch pairs perfectly with this Southwest Chicken Quinoa Bowl recipe and it’s sure to help you power through the day.

Preparation

  1. Combine ½ cup quinoa and 1 ½ cups of chicken stock in a small sauce pot. Season with salt. Bring to a slow simmer. Cook for 10-12 minutes until grains are cooked through. Cool.
  2. Place quinoa in a small serving bowl and top with the remaining ingredients.
  3. Top with Bolthouse Farms® Organic Avocado Ranch Dressing.
