- Combine ½ cup quinoa and 1 ½ cups of chicken stock in a small sauce pot. Season with salt. Bring to a slow simmer. Cook for 10-12 minutes until grains are cooked through. Cool.
- Place quinoa in a small serving bowl and top with the remaining ingredients.
