This Purple Roasted Cauliflower Dip featuring Bolthouse Farms® Creamy Balsamic dressing is rich, creamy and delicious!
Preheat oven to 425º. Line or lightly grease a large rimmed baking sheet.
In a large bowl toss cauliflower florets and beets with 1 tablespoon zaatar, olive oil and salt. Transfer to prepared baking sheet and spread in an even layer. Bake for 15-20 minutes or until fork tender.
Transfer roasted vegetables to food processor and blend with balsamic and feta until smooth. Transfer to a serving platter and top with remaining zaatar spice and if desired more feta and fresh herbs. Serve with fresh veggies and pita chips.
