Purple Roasted Cauliflower Dip

This Purple Roasted Cauliflower Dip featuring Bolthouse Farms® Creamy Balsamic dressing is rich, creamy and delicious!

Preparation

  1. Preheat oven to 425º. Line or lightly grease a large rimmed baking sheet.
  2. In a large bowl toss cauliflower florets and beets with 1 tablespoon zaatar, olive oil and salt. Transfer to prepared baking sheet and spread in an even layer. Bake for 15-20 minutes or until fork tender.
  3. Transfer roasted vegetables to food processor and blend with balsamic and feta until smooth. Transfer to a serving platter and top with remaining zaatar spice and if desired more feta and fresh herbs. Serve with fresh veggies and pita chips.

  • Florets from 1 medium  head purple cauliflower (about 1-1 ¼  pounds)
  • 3 medium beets, trimmed and cut into ¾” wedges
  • 2 tablespoons zaatar spice, divided
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ½ cup Bolthouse Farms® Creamy Balsamic
  • ¼ cup crumbled feta cheese, plus more for serving
  • Fresh chopped parsley or mint for serving, optional
