Orzo and Carrot Medley!

In large saucepan, bring water to boil; add orzo pasta.
Gently boil for 7 minutes.
Add MATCHSTIX® and peas.
Bring back to boil and cook until pasta and vegetables are just tender, about 2 to 3 minutes; drain.

Meanwhile, in large non-stick skillet, saute onion and garlic and herbs in margarine and olive oil until vegetables are just tender.

Add pasta mixture to skillet.
Add salt and pepper.
Heat, stirring well.
  • 3 qts. water
  • 1 cup dry orzo (rice-shaped pasta)
  • 1 pkg. (10 oz.) fresh MATCHSTIX® carrots
  • 1 cup shelled fresh peas or frozen petite peas (no salt added), thawed
  • 1 medium onion, finely chopped
  • 2 medium cloves garlic, minced
  • 1 tsp. dried dill weed or Italian seasoning
  • 1 tbsp. margarine
  • 1/2 tbsp. olive oil
  • 1/2 tsp. salt
  • White pepper to taste
Makes 5 servings (about 5 cups).
